OKRA & BEEF STEW

INGREDIENTS
- 2 lbs. beef, cubed
- 1 lbs. okra, trimmed and sliced
- 2 potatoes, diced
- 1 onion, chopped
- 3 garlic cloves, minced
- 2 tbsp fresh mint, chopped
- 2 tbsp fresh parsley, chopped
- 1 tsp paprika
- Salt and pepper to taste
- Juice of half a lemon
- 2 tbsp oil
- 4 cups beef broth
- 1 tbsp. Napastäk Red Pepper Olive Oil
- 2 tbsp. Napastäk Fennel Olive Oil
INSTRUCTIONS
- Rinse beef and bring to boil, simmer for 2-4 hours or until tender.
- In a separate pan, add Napastäk Olive Oil, onion and garlic, sauté until softened.
- Add potatoes and okra, cook for another 15 minutes until tender.
- Stir in paprika, salt, and pepper.
- Add the beef broth and beef. Bring to a boil, then simmer for 30 minutes.
- Stir in mint, parsley, and lemon juice.
- Adjust seasoning and serve alone or over rice.
