FIDEO PAELLA WITH PRAWNS
This dish is a summer staple at the Napastäk dinner table. Hearty and flavorful, it's sure to add some fun to your weekly dinner lineup.
INGREDIENTS:
- Napastäk Kettle Roasted Jalapeño Olive Oil
- Cilantro
- Parsley
- Yellow Onion
- Green Bell Pepper
- Garlic
- Smoked Paprika
- Sweet Paprika
- Fideo
- Chicken Broth
- Saffron
- Green Onions
- Prawns
PREPARATION:
- Heat 1 tablespoon of Extra Virgin Olive Oil in a Paella pan over medium-high heat, add fideo stirring until nicely browned and toasted.
- In a separate pan, heat 1 tablespoon Napastäk Kettle Roasted Jalapeño Olive Oil.
- Add chopped yellow onion and bell pepper and sauté for 8-10 minutes until soft.
- Add garlic and both paprikas until fragrant, about 1 minute stirring occasionally.
- Add to paella pan and mix with fideo until combined.
- Stir in 2 cups of the broth at a time while simmering, add saffron and salt to taste.
- Bring broth to a boil, adding the remaining broth until all used and then reduce heat and simmer. If the liquid evaporates and the rise is still al dente, add more broth.
- While the fideo simmers, heat a grill pan or skillet over medium-high.
- Separately toss green onions and prawns with 1 tablespoon Napastäk Kettle Roasted Jalapeño Olive Oil, each in their own bowls, and season with salt and pepper.
- Char the green onions turning occasionally.
- Char or grill the prawns until cooked through and shells are charred about 3 minutes per side.
- Tuck green onions and prawns into the fideo and cover to simmer for another 20-30 minutes covered with foil.
- Garnish with fresh chopped parsley.
