FIDEO PAELLA WITH PRAWNS

This dish is a summer staple at the Napastäk dinner table. Hearty and flavorful, it's sure to add some fun to your weekly dinner lineup. 
INGREDIENTS:
  • Napastäk Kettle Roasted Jalapeño Olive Oil
  • Cilantro
  • Parsley
  • Yellow Onion
  • Green Bell Pepper
  • Garlic
  • Smoked Paprika
  • Sweet Paprika
  • Fideo
  • Chicken Broth
  • Saffron 
  • Green Onions
  • Prawns
PREPARATION:
  1. Heat 1 tablespoon of Extra Virgin Olive Oil in a Paella pan over medium-high heat, add fideo stirring until nicely browned and toasted.
  2. In a separate pan, heat 1 tablespoon Napastäk Kettle Roasted Jalapeño Olive Oil.
  3. Add chopped yellow onion and bell pepper and sauté for 8-10 minutes until soft.
  4. Add garlic and both paprikas until fragrant, about 1 minute stirring occasionally.
  5. Add to paella pan and mix with fideo until combined.
  6. Stir in 2 cups of the broth at a time while simmering, add saffron and salt to taste.
  7. Bring broth to a boil, adding the remaining broth until all used and then reduce heat and simmer. If the liquid evaporates and the rise is still al dente, add more broth.
  8. While the fideo simmers, heat a grill pan or skillet over medium-high.
  9. Separately toss green onions and prawns with 1 tablespoon Napastäk Kettle Roasted Jalapeño Olive Oil, each in their own bowls, and season with salt and pepper.
  10. Char the green onions turning occasionally.
  11. Char or grill the prawns until cooked through and shells are charred about 3 minutes per side.
  12. Tuck green onions and prawns into the fideo and cover to simmer for another 20-30 minutes covered with foil. 
  13. Garnish with fresh chopped parsley.
