A treasured staple of Sicilian cooking, amber-hued fennel pollen is harvested from fennel's golden bunches of flower every spring, then dried with a deft touch. Imported from Italy and incorporating fennel pollen, this olive oil has a woodsy flavor. It's delicious on grilled seafood and meats, or in summer salads with orange and thin slices of fennel bulb.
